    Good news is that PCE is not fatal and typically spontaneously resolves.  Remedies such as that suggested by @JLMoran are sometimes effective in treating the symptoms but really do nothing to address the fundamental cause of the ailment.  Currently, there is no cure for PCE, but those afflicted can still lead a productive life with appropriate group counseling and some physical therapy to address any contusions that arise from pounding on the floor with your fists screaming "there's still 42 (or how ever many) days before embarkation".  Hang in there; and pay no attention to the naysayers who might say "Oh geez, is that a tropical storm forming in the Eastern Atlantic?".

    Not heard of that, but my guess is that cruise staff would appreciate cash tips much more than a gift bag.

    ...and many reviews of Enchantment mention the poor maintenance of the ship, noting the rust stains and other visible wear.  Good to see that the crew is concentrating on the really important aspects.  But maybe I'm in the minority; some rust stains and railing finish don't really impact my overall experience.

    They love gifts of Green..  Crew usually don't have very much room to store things as they live in cramped quarters. Their pay is minimal. Many send most if not all of what they make back home.

    One way car rental back to MCO.  Put the luggage in the trunk and stop for a ride on an airboat on the way back.

    My wife and I are doing this itinerary in Nov of this year.  Rather than suggest excursions, here is a list of what we plan to do, which might give you some additional ideas and options.  Hope that this helps.  
     
    St Maarten -  12 meter regatta.   https://www.12metre.com/
    Sail a authentic America's cup yacht and engage in an actual race following to Cup rules.  One can take an active part in trimming the sails, etc., or just sit back and let your other sailmates do the work.  We've done this before in Cozumel and really enjoyed the experience.  Available as an RCCI excursion.
     
    St Kitts -  our choice is a Couples Massage and relax on the ship.  But the Island tours that have already been suggested are very nice and received great reviews.

    We chose the seafood option, but all look interesting.  Not been here before, but the company has received outstanding reviews.  Independent operator.

    Still deciding if we want to visit the volcanic mud baths or just spend some beach time on Jalousie Beach.  Being beach folk, you may be interested in the latter option. Independent operator.
     
    Barbados -  Mount Gay rum tour.  Available as an RCCI excursion.  According to the description, RCCI offers the extended tour which is not available through independent booking on the date that we dock.  
     
    San Juan -  We have a late flight out of SJ, so we booked the RCCL excursion that allows 4 hrs to explore Old SJ prior to departure with luggage transfer and transport to the airport.  Seemed like a god way to wind down from the cruise.
