Yes, you can come and go as you please.  It's yours for the day.

We were on Liberty last Valentine's Day. They decorated one end of the Promenade with a string of red and white balloons (like a balloon arch that was upside down) , and they had balloons around some of the venues too. I don't recall anything special like a themed triva, but they did have a special dinner at Chops that included a glass of champagne, lobster, and some sort of dessert in addition to the standard menu. It was quite a bit more than the standard fee. $80ish per person comes to mind. I may have posted about it in the live blog linked in my signature. 

They had special Valentine reservations at specialty restaurants. I didn’t get to go as I got Covid the day before the cruise.

We did an Easter cruise last year on Anthem.  Easter was embarkation day and the only thing I saw was Catholic mass in the music hall.  No bunnies or eggs or anything like that.

I got it too....my cruise is next week so it scared me a little that I had somehow lost track of time!!
Still have access to app and cruise planner.   Maybe an $18 drink special is being planned by the interns.

I just went to my own home muster station and there was no crew member to greet me. Nor was my drink waiting for me when I got back.

Based on the fact that 5 drinks per day is enough for you, I'd forgo getting a beverage package as you'd need to drink 6 or more alcoholic drinks each day to make the classic or premium beverage package worthwhile. I'd recommend booking a sail only rate and just paying as you go.
Since you're D+ with RCI, you're automatically Elite with Celebrity.  Elite and above Captain's Club members get free drinks at most bars on the ship between 5-7 every night except the first night.  As many as you can drink in that timespan.

We did - we got tacos & drinks at the bar/restaurant by the port where they drop you off after the excursion. We shopped a bit around there too! 🙂 

We just did this cruise and did the Deer Island Kayak excursion too - it was wonderful but the kayak is definitely more than 0.5 miles that the guide said it was...we lost 4 people on our kayak trip because they couldn't make the trek - a boat came alongside us the whole way just in case people got tired! It was a pretty hike too but definitely bring closed toed shoes for it.

Admittedly I don't cruise as much as I'd like to, but I love all the info that Matt gives us here, in his videos and the podcast. I'm still trying to follow his advice and look for a TA... but none here in Australia.
