I was like WHAT!!!  First timer in an Owner's Suite in Symphony!!!  I've never been a strong reader.  Enjoy!!

Hate to be a cruise nerd but....
Technically, you aren't sailing on an amped Oasis Class ship. Symphony and Harmony are not part of the Royal Amplified program.
I know what you mean tho, Symphony is the latest and greatest and has features that other ships that have been amped got as a result.

Driving from Orlando to Miami today.  Tomorrow we’re leaving for our first time cruising on Symphony!!!!  So excited to try an Amped Oasis class ship and an Owners Suite!!!!  We’ve only been on Allure and Oasis so far!!!  We’re sailing with our almost 8 year old son and he’s really looking forward to trying all 5 of the slides!!!!!  He also can’t wait to go back to Cococay to ride the Daredevil again!
Any recommendations for things we shouldn’t miss on Symphony?

It is always so exciting to be leaving for a cruise.  I'm a bit jealous :-)
We have not been on Symphony but we wish you a fantastic trip.  Please make sure you share some of your tips and exciting experiences.

also want to add that all MTD dinners will be in the same dining room as to not interfere with the traditional dining service.

As @melski94 posted above. Whether you have My Time Dining or Traditional Dining everybody is assigned to a specific dining room for your cruise. The food is all the same, they just have to spread everybody out in the different rooms.

You will be assigned to one of the dining rooms and eat there the entire cruise.  It will be on your sea pass card.
I always make a reservation for my family of 6.  You can show up but I find it easier to plan a dinner time around 6:30 for my family.  It is easy to change if our plans change.  You can make a reservation before the cruise on your Cruise Planner

A table across from us had a woman who was dressed to the nines and looked fantastic. Her guy was wearing dirty jeans and an AC/DC t-shirt. There are varied opinions on what "your best" is.

I’d also do the villa, if you’re going to be paying the money you’re paying, why would you not want to have all the perks and space it comes with?  Plus 2 points per night.
Booking balcony rooms, you’ll basically have bedrooms for everyone and nothing else ........ in a villa, you’ll have bedrooms PLUS all the extra living space outside the bedrooms ............ to me it’s a no brainer and it would be FOOLISH  to not get the villa with all the money you’re spending no matter what.

Orange Crush is correct, we do this on EVERY cruise. Phone is always in airplane mode onboard the ship. Only time we take the phone off airplane mode is in a US port, USVI, San Juan, where AT&T is accessible. 
The caveat we found was .....on an iPhone, you have to select and set up wifi calling BEFORE putting into airplane mode. We leave WIFI calling on ALL the time, home or away. We tried showing some fellow cruisers how to do this several times, problem is if they switch off airplane mode to enable wifi , phone will incur large charges out in mid Atlantic ocean.
We found other carriers had wifi calling also. I don't doubt there are those carriers who don't support wifi calling.

Be sure to set up WiFi calling before your cruise. Meaning, ensure it works before you get onboard. You can test it at home by following the steps outlined above while connected to your home wifi.

Not true.  An iPhone will route all calls and SMS texting entirely over a wifi network if the plan and phone company support it.  Access to a cellular signal is not needed.  It is strongly recommended putting a phone in airplane mode, and then enabling wi-fi so that the cellular radios are turned off and there's no chance of accidentally connecting to the ship's very expensive cell tower.
The recipient does not need to have an iPhone or use a different app, as these will go through as regular calls and texts.

We bought both the Passport book and the card.  Used the book to get through security when boarding and through immigration on disembarkation.   We opted to leave the passport books in our safe and took the cards with us at ports of call.  Worked out great! 

I have only traveled on RCCL and have been to Europe twice with them.  The ships were on the smaller size (Vision Class) but the experiences were fantastic.  The crew really were amazing, the Diamond Lounge was cozy with the staff getting to know us and our preferred drinks.  We will absolutely sail with RCCL in Europe again!
