I have these issues too. 
My tried and true method of dealing with it (after much research, analysis, evaluation and experimentation…mulling over the intricacies and possibilities) is to first have a drink. Then, after thinking long and hard…another drink. Sooner or later the app will get back to normal. Ish inebidable.?

If I did that I'd gain 48 pounds!! 

My grandmother used to take my sister and I to a place called Happy Land on Siesta Key in Sarasota for lobster night.  It was an AYCE which was rare then   This was in the late 50s or early 60s.  They had this huge revolving salad bar which was unusual then also.  The first time I grabbed my salad plate to go to the salad bar my grandmother took the plate from me,  tapped me on the back of the head and said  "You are here to eat lobster"

Explorer is a great ship with plenty to do. You won't get bored.
It has a solarium, but it is an outdoor pool.

We have not been to any of them so it would be all new to us!  We like a nice relaxing beach (with drinks!) and like to putter around shops & restaurants.  I actually like Costa Maya where I can browse to my heart’s content.  We are not snorklers/divers.

ABC often have late departures due to the proximity of a neighboring ABC destination.  What's unique about this is the ability to get off the ship and enjoy a sunset from a beach.  If you think about it, most cruises will have you back on board for sunset.
Having said that, consider the port times for both itineraries.  Is a sunset sailboat cruise or sunset beach experience something you would enjoy?  Do both itinerary offer this opportunity?
The DR is a somewhat new destination for Royal.  So that may be an opportunity to try a new destination or one less frequented.

For an upcoming 6 night On Odyssey the app suggests day 2 is lobster night however the menus don't seem to be fully set so I'm not banking on that.  I'm thinking it was later in the cruise a couple weeks ago but I could be mistaken.

Not a problem with MEI! They have always contacted me first about a price drop before I even checked!
