Because you are stating it as fact.  it is not fact.  He is simply trying to show they are exceeding what they have been told is required to dispel fear from people trashing cruise ships on social media.  You yourself offered "major source of concern".  It's not a major source of concern, rather they made an adjustment just in case.  

If you look in the app for Quantum cruises this month and next, CK is listed and the menus are nearly identical to other ships in the class that have a CK. 
If you look at Spectrum you can see the silver and golden menus.

Spectrum was built for China.  From the moment they started designing her they knew she would go straight to China so they created suite branding that is designed for China,
Sea/Sky/Star work for westerners.  Silver/Golden work better for Asian consumers.

Relatively new concept for ships operating from a China home port.  Silver Suites have access to Silver level benefits including a Silver dining venue.  Golden suites have access to Golden level benefits including a Golden dining venue.  
Combination of marketing different names and benefits for what works best in China.

From my time configuring card access systems I see no reason they cannot activate it during dinner hours. I'd feel weird knocking on the door too.

As far as I am aware, CK for JS has always been “space available”.  I love the extra space and walk-in closet (most ships) of a JS and the double points. If I want a guaranteed seat in CK for breakfast and dinner, I book a GS or higher.  I personally find it distasteful to beg to be allowed into the CK. Half the time you have to bang at the door to even be let in.  No thanks.  If I want in, I will pay to be there with no questions asked or limitations. 

I believe that for sailings out if China the system is completely different. No CK at all if I remember KristiZ’s blog. Silver and Gold dining and I don’t know if JS are part of that. Maybe JS qualifies for Silver. 

@KristiZ sailed in a Junior Suite recently - the only thing that I know is that the Spectrum is set up differently and there is no Coastal Kitchen (there's a different restaurant for Silver Class, to which I believe Junior Suites belong).
I believe she stayed in the Junior Suite on the 2nd leg of her B2B sailing.
 

Cruise Summary
This cruise was a pretty fantastic experience overall.  New Zealand is pretty amazing and every port was very welcoming.   Sydney was a great city to start from.  
A couple of days pre-cruise to adjust to local time was perfect.  In general terms I haven't found the time changes to be that hard on the system on either end.  The long flight helps the transition.  
I was able to use credit cards in most cases so there wasn't a need for a lot of cash.
Third time on Ovation.  I'm very comfortable with Quantum class and it was a good fit for this cruise and the environmentals around New Zealand.  Tendering wasn't an issue, they seem to have this down to a science on Ovation.  In fact they did a better job tendering on Ovation than Vision did on a recent cruise with a tender port.  
I booked this cruise for the ports of New Zealand yet the time in Fiordland was the highlight of the cruise.
This was a photo intensive cruise.  Picture stats: 4,828 pictures taken, 870 posted.

This is very unfortunate and most likely a lie. I don''t get the "tipping is not a Chinese city" joke. People who brag about how much they tip, are the ones who don't or barely tip.
A funny story, I worked my waitress gig this morning and we serve pizza and pasta. A party of 14 people came in, they couldn't count it was actually 19, screw the children they can eat of the floor?. The main guy was waving his card and saying "order what you want, its my sweeties big 14th birthday." Needless to say their bill was $410, he bragged about really taking care of the waitress because he was "that guy." He left $70, which is not even the standard 20%. The waitress has to share 25% of that with the busser and bartender plus taxes. They sat in her section her entire shift, which decreased her earning potential. The wife kept saying maybe we should go and he kept saying, she got taken care of.
When things like this happen it shows me truly that everyone has a different perception when it comes to tipping. I am sure he assumed "$70!!!! on one table she's rich." I am not saying she wasn't appreciative for the tip, more so annoyed that he didn't tip standard and stayed at her table for 4hrs.  This guy bragging could have been on a B2B, winning thousands of dollars at a time in the casino. There are so many factors in play and tipping is not one size fits all. I have no doubt that an extra $20-50 after a cruise is just as appreciated as the so-called $1000. We all tip what we can and shouldn't feel anything but joy when we hand it to the person.

The triple sec and lime juice aren't really keto friendly (although not the worst) I'd go for a straightup vodka and diet cranberry.  I'm a rum guy, so my goto is rum and diet - just make sure its not the sugar added kind of rum like malibu.  Basically if you stick to vodka, gin or your higher proof whiskeys and rums, you'll be ok. Just make sure the mixers are sugar free as well ;)

Take a look at this past thread... I attached all of the MDR menus from our Allure cruise last May (7-night Western Caribbean).
The MDR menu is pretty standard across the fleet (at least based on region... eg. Caribbean vs. Mediterranean)...
 
 
Also, take a peek at the formal night "schedule" directly from the RC website... Lobster tail night is usually the 2nd formal evening.
From what I understand, and based on our experience in the past, it should generally (unless noted below as with Oasis & Allure) be the last sea day that is NOT the last evening of the cruise.

It appears that UK customers have to use the UK call centre and the agents seem to be more policy minded, I've even emailed them but still no joy.

Bottom line, do not cancel due to coronavirus. It's not present here and zero reason to cancel.

I work in a hospital, and there are zero concerns. Obviously we have systems in place and are ready if it does become a concern, but for now it's a wait and see. In my opinion I have a better chance of getting it at work in my hospital the I do on my upcoming cruise ? 

Just gonna leave this riiiiiiiiiiiiight here......

Its growth rate on a cruise ship (which has grown by 1% since I wrote that) cannot be compared to the growth rate outside in the real world.   Its night and day difference. Norovirus, Influenza and every other virus spreads faster in a confined space. My bigger message in pointing all of this out is bigger than JUST coronavirus....its living in fear as a result of hype and hysteria. I refuse to buy into it before looking at cold, hard numbers first, because numbers never lie. Im inside 90 days on a cruise, and im more concerned with breaking my ankle tripping over my 4 year olds toys because statistics show im more likely to do that than contract Coronavirus. Welcome to the boards, btw!

The English pub may have draught beer, but would be anyones guess which beer it would be? Maybe somebody who has sailed her recently might know? I forgot to mention, the beer choices may also depend on the location of you are sailing from, I have yet to get a answer to this query.
