The themes are pretty standard on most Caribbean cruises.  While they are making some changes to the ship, most of the changes won't have a direct impact on activities or themes on the ship.  I would look at a current Compass from a Harmony or Symphony 7-night Caribbean sailing to get an idea of what themes there might be.  Usually I've only see things such as Caribbean or a white theme and then there's usually a 70's or 80's night or both.
I will be on that Oasis sailing as well so I'm pumped to get to see the all the new changes!

Make sure you complete the Special Needs form: https://secure.royalcaribbean.com/allaboutcruising/guestSpecialNeeds.do
You will want to arrive at your Muster Station early. They will need to scan your mom's SeaPass card to check her in for the muster drill but they will guide her to the best area for her to stay throughout the drill.

They make you purchase it for all the adults in the room when you are onboard as well.  You have to at least purchase the Refreshment Package for your wife.  For the best prices do this before you get onboard.  It does require a phone call to Royal to make the purchase to override the requirement of both having the Deluxe package.
The Deluxe package was $89/day onboard my last cruise.  It was regularly $49-$52/day in the cruise planner.  Totally worth calling and getting your wife the Refreshment Package (which is typically $20-$22/day in the cruise planner).

RoyalUp doesn't change your original reservation.  If the kids aren't on your original reservation getting a RoyalUp bid won't add them.  i don't believe that you can add them without a reprice either.
If you are working with a TA, I would speak with them about your options to get the kids added.  If you aren't working with a TA, this would be a great reason to transfer your reservation to one so they can explore the options with you.

It should be available for pre-purchasing stuff but it doesn't show sometimes until closer to the sailing.  If you have a TA you can have them check on it for you and they can usually get it applied earlier.

We did Playmakers for lunch on the first day on Symphony.  It was a perfect start to the cruise.  No need to worry about reservations or anything.
We boarded early (as soon as the ship was cleared) and we were taken to our room.  The Genie had the room stocked with the pre-requested beverages when we arrived and I think there was a dish with some random hors d'oeuvres that were probably a suite thing.  I think if you get onboard early and go straight to your room it may be a little premature to expect food requests upon arrival.  I know when we returned from lunch on embarkation day there was food in the room and pretty much from there on for the entire rest of the cruise there was food waiting for us in the room when we returned in the afternoon.  Any time we came across something that we wanted, we just let the Genie know and she took care of it.
I know sometimes you will read about the Genies proactively pre-empting a request but you can't expect that.  You can't be disappointed that an unspoken request was not fulfilled.  Don't worry about feeling too demanding; if you want something just ask.  It can be very specific -- we requested the grilled shrimp from Hooked one day as we hadn't tried it when we ate there and then when we returned from our show we had 4 plates full of them waiting in our room.  I found a salami on a charcuterie board that I liked during a cabin crawl and we took a photo and sent it to the Genie and ended up with that in our room as a snack.
They do have access to SeaPass accounts and review any charges, so they sometimes can garner a preference based on that..even from your no charge drinks that you get out and about the ship.  But sometimes if you don't say anything you aren't giving them much to work with.
If they don't offer it, you can ask them to place a room service order for hot breakfast in the morning to be delivered to the room.  Ours set it up as a standing order and then every evening we could let her know if we wanted something different.  You could even order bloody marys or mimosas to be delivered with breakfast..or Starbucks!
If you have any interest in the special classes onboard (cupcake decorating, sushi making, escape room) then let them know in your response to their introduction email so they can incorporate that into your schedule.  You may not hear anything from them but that first day they will have an itinerary with your scheduled show times, meal times, classes, excursions, etc. and will go over it with you and allow you to make changes.  You can ask them to send you the Coastal Kitchen menus if you want to use those to make a decision on which night you choose to eat there.  If you have private tours or are traveling with a group you can share your pre-scheduled events and they will work around all of those as well.

It can be, but I've also experienced it be just warm.  It's the nature of banquet-style dining which is basically what the main dining room is at dinner time.
You are likely to have more luck at the specialty restaurants as the food is more likely made to order.   I've also found that the lunch in the main dining room has a buffet-style options that usually has a made to order station -- pasta, stir fry, etc. which gives you the opportunity to get a hot meal.
RCCL is also very good with allergies if you note it on your reservation.  They should have someone speak with you in the dining room to go over the menu with you to ensure that nothing has your allergen.  You can also ask for this in the Windjammer (buffet) and they will bring someone out to answer your questions and find something that works for you.

You have to hit up the WJ first for the best photos before the food has been disturbed by the masses!

    Pretty much what @SpeedNoodles said!
The group activities are optional, so I wouldn't let that keep you from doing something that you really, really want to in the ports.  Fortunately the Canada/New England ports are relatively easy to navigate and excursion ideas are plentiful!

Maybe it's an AmEx Travel thing when you book through their travel portal which effectively makes AmEx your TA.

I should clarify that the food thing is a Star Class perk..didn't mean to infer that it was included with the beverage package.

Haha yep.  Same with the activities that you booked.  The Genie will take care of refunding you for all of that if you don't go ahead and cancel before the Cruise Planner closes.  You make sure to tell the Genie that you are interested in the classes and they will definitely offer you the behind the scenes ship tour as well.

It includes individual alcoholic drinks up to $13 (you pay the difference for any overage).  I say individual because it doesn't include flights or tastings or buckets of beer where you are served multiples at once.  You also get specialty coffee, bottled water, fresh squeezed oj, smoothies and juices from the spa cafe, milkshakes at Johnny Rockets, soda..basically everything that has a normal charge and isn't complimentary for everyone will be included.
You also shouldn't get charged for any food that comes with a charge like the stuff at the pub or in Vintages.

I would consider going through a TA to help facilitate this.  They will be able to answer your questions.  If you can't get your group to commit, you can also go for refundable group rates so they wouldn't have to worry about losing a deposit.
I believe a group rate is also considered a promo and sometimes won't be able to be used in combination with the other discounts out there.

RoyalUp offers can show up with absolutely no correlation to inventory.  It's a way for them to gather offers in case of a cancellation.  Of course if there's availability you would have a better chance if there was a room available..but there's no guarantee of that.

The one with did with Royal wasn't too bad, but it was a combo motorcoach/train tour..but most of it was done on the double-decker dome train.  But for it being our first time it really helped because we didn't have to worry about all the logistics of where we were staying each night.  Each stop had excursions we could do just like on the cruise.  Now that I've done it once I know exactly what I would pinpoint again to do on my own if I ever get a chance to go back.
