Overall ambience and taste / portion size. The Kitchen has more of a "pizza place" vibe. For dinner we usually have Osso Bucco and for me it was much better at GT (white tablecloth Italian feel). Having said all that, I found the wait staff at GT to be way more attentive (just my experience, YMMV, only had the Kitchen twice for dinner, GT many times).

We've had both; GT will always be our favorite. Will not visit Kitchen again, the upcharge is not worth it IMO.

If I had to choose between MDR and CK, it would be CK hands-down every time. I agree with @OCSC Mike and @WAAAYTOOO, but as you said, pleasure is in the eye of the beholder.
Also, try CK for lunch and breakfast for sure.

Inconsistent is right. Our TA is trying to figure it out. I got an email(s) 7 cruises adjusted (some PDCC, some Nassau). Every email has a different amount. Smallest $7 higher, Largest $51 higher. Has to be an RCCL funny-math thing. We'll see.

Yes and yes. Get to the MDR EARLY upon arriving. If you're in a suite, contact the Concierge for arrangements ahead of boarding.

When I arrived to the ship, I asked about availability (believing that was the issue and not that I was limited to 1 specialty restaurant per day). There was availability without any issues however, I was told that 1 dinner would be covered under UDP and the other would have to be paid for outside of the UDP. This was on the 6/23/23 sailing on Oasis so, very recent.
Here are the terms of the UDP on CP for a current Oasis booking. It mentions 'unlimited' and 'multiple per night' several times. Did you ask the concierge about the advertised terms of the UDP?
