Interesting question.   Traditionally L & M was featured in the main theater at night during the latter part of cruise.   Seems like last 2 cruises I've been on  they scheduled it for 2:30 pm in the theater.   We usually attend but did not because.......2:30 pm is prime pool, solarium, or nap time.  At least for us. 

The Grand Turk port schedule has RC ships there through September. Though I could see those being placeholders, not an indication of RC canceling Labadee that deep into the year.

You get the luggage tag and the pin on the cruise following the one you turn D+.  Those are different from the chosen amenity you get on each sailing.

Request a change from whomever you booked the cruise with..your TA can do it or you can call Royal if you booked directly.  If there's not availability they can wait list you for early/late dining. All else fails, visit the MDR when you board and ask to change.
You can call Crown & Anchor to make the change. They say give it at least 10 days before your cruise.  If you get the wrong thing or want to change onboard you can visit the Loyalty Ambassador on the ship.

For us, it depends who the cruise director is. That is how we decide if we are going to attend or not. If it's a high energy, funny, CD, we try our best to go.  Much like The Quest, IMO, the CD makes or breaks that show.
However, our last two sailings, we have skipped (even one with Ricky Matthews who we love), because of the times that others have mentioned above. They keep doing the show at 2:30pm now and that does not work as well for us.

@OCSC Mike is correct the additional person purchases a refreshment package.  If there is a medical reason for not wanting drink package, you can ask for additional options.  (Not sure if that works any more).

Four decent sized, reasonably high quality pours for free? Absolutely. The sommelier leading the one I attended did an excellent job explaining and helping those in attendance understand the aroma wheel (an underappreciated aspect of enjoying wine).
It also didn't hurt that I was at a table set for six that only had four people so I got extra. 🍷

I have a Feb 2025 sailing on the Ascent and the CP is up and available. The "sales" are there but I think BF will be your best bet. 

Celebrity does have sales on this but it is usually only a few times a year.  They don't tend to spam you as much as the Royal side of the family.

Be careful adding cash.  I did this for my son on our last family cruise.  He didn’t use it all and cash does not go to your card on file. (Who knew?!) He was flagged getting off the ship to go to guest services where he had to wait on a line to find out the issue and was quite relieved it was a cash refund and not anything else.  Thankfully we were not rushing to the airport as this was an unexpected blip.

I was told you can also do this with a rep or TA.

I assume you could go to guest services and put some cash down on each account.

I don't think you are expecting too much.   An uncomfortable bed put a damper on a very expensive vacation.
Royal does a lot of things well but consistent and comfy beds are not at the top of the list.  Post cruise resolutions aren't either.
Next time, keep asking and insisting on satisfactory resolution while still on the ship.

Your family may be different but my guess is, they are not going to want to do every thing together. 
Focus on family time, perhaps at dinner, to share stories of the days adventures. I am sure staff will work with you on seating, even with my time dining.
Smaller groups will be easier to manage for interests. Pre teens, teens and seniors are probably not going to want to do the same things.
There will be times paths cross and times the entire group can gather. Spontaneity is in large part what cruising is. Don't try to manage every activity. It just don't work.
