We did the Talum and beach break and it was amazing. Our guide was very detailed and awesome. There was some on your own time but vast majority was with guide. 
It was also 8 hours and we were the last group back to the ship but never felt concerned they’d leave with a tour group.

I haven’t yet but my husband and I are doing it in on the September 22nd Harmony sailing

I’ve only ever not received one once and I think that’s because we were in the room during the normal turn down time when they do the animals and the attendant had to come back while we were at our show.  
On a side note, i requested a dinosaur and was not disappointed ?

When I booked my cruise they said there would be no math.

Ahh, that makes sense.  Not that I really need a beverage at 10:30am but they are pre-paid so....?

The menu is as stated, but check with your headwaiter in MDR when you first board (as the brunch is usually near the end of the cruise) & he/she will be able to tell you what accommodations can be made.  For example, DD is gluten free, & the waitresses told us which apps were gluten free (on Adventure, they brought us sushi rolls & chips/guac, but I don't remember if they just brought them to the table or if we ordered them), and were also able to have gluten free french toast made for her.
They definitely keep the drinks coming, I enjoyed it :) !  I couldn't decide between entrees, so I got waffles AND a steak with no problem.  

I like chicken and waffles...but steak and waffles sounds even better!

I think we decided Solarium Bistro for embarkation day lunch. 

In St Thomas we doing some island boat tour + beach stop. In St Maarten we are doing the voluntourism hike

My husbands favorite dish is the lamb shank.  I don’t eat lamb so I cannot give an opinion but he dearly loves it.
