Orange County is too far away.  LAX or Long Beach are your best airport choices.  LAX is a very busy airport and it has a lot of flights to choose from.  Long Beach is smaller and far less crowded.  But, flying into Long Beach might be more expensive and since it is a very small airport, there won't be as many flights for you to choose from.  The cruise pier in San Pedro is about 30-45 minutes away from the airport.  Plan for transportation from the airport to the hotel (if the hotel does not offer a free airport shuttle).  The closest hotel to the cruise pier in San Pedro is the Studio 6 San Pedro - Port of Los Angeles.  It is within walking distance to the pier, although you could still take an Uber or Lyft if you wanted to.  The hotel is similar to a Motel 6.  Nothing fancy.  The next closest hotel to the cruise pier in San Pedro is the Crown Plaza Los Angeles Harbor Hotel. This is a nicer hotel than the Studio 6, but in the same neighborhood. You could walk to the pier from the Crown Plaza, but it's a longer walk. I would probably take an Uber or Lyft (unless either of these hotels offer a free shuttle from the airport and then to the cruise pier?? I don't know.) Once on the ship, I would go to guest services and pay for an airport transfer from the ship back to the airport at the end of the cruise.  It would probably be cheaper than a taxi.

Johnny Rockets will have them but I believe they use Texas toast so we always ask for extra extra cheese😁. Not too bad that way. I may even add a little bacon as well. 😎

Yes as along as you take the test within 24 hours of your departure back to the US.  So if you are going to go the at home testing route I would suggest you take the test on the last day right before you go to bed this way you know the test results are within that 24 hour time frame just in case your flight experiences a lengthy delay.
Fingers crossed the CDC follows other countries lead and at the very least drops all testing requirements for fully vaccinated travelers. It would be nice to see the testing requirement dropped altogether but I'm not sure if the CDC is ready to relinquish that kind of control just yet.

I'm afraid that's it.  As far as I can tell, there aren't any cruise lines that leave from the U.S. and go to Port(s) of Call in Europe and then return.  Even if they did, I don't think you'd avoid the cost as mentioned above.  However, you could fly, one way to or from Europe, spend some time there and return on a cruise repositioning to the U.S or fly back.

48 hours before sailing is when the Cruise Planner closes I believe. If you miss that deadline you can cancel onboard and get refundable onboard credit.

I know, so many germs!! I once saw a toddler sucking on its fingers and then it touched a door knob. So incredibly gross. Then the time the guy left the bathroom without washing his hands, heading back to the buffet - are you kidding me?!  I've even caught several colds from being out there - it was terrible. I now wear rubber gloves and a respirator everywhere I go then bath in Neosporin every evening when I get back to my house. Its the only way to be safe out there. Those germs will get ya if you aren't careful. Seriously, we are by design (immune-compromised excluded), able to wade through this filth. Wash your hands frequently, exercise, eat right, and live. You can't change the world or anyone else's behavior, so if close quarters with 1,000's isn't your thing, find another place to spend your time. But I will say, the less you expose yourself to germs the less capable your immune system becomes. Think of it this way, your friend in the elevator was doing you a favor by triggering an immune response, making you stronger and more capable of fighting off the next onslaught.  Cheers!!

Days not hours. Sail date is day zero…
For example…sailing any time on Sunday (day zero)…you can test any time on Saturday (day 1) or any time Friday (day 2).

What style BBQ does it resemble? I'm from the Memphis Tennessee area so BBQ is on most for our menus.

It’s where the ship anchors out from the port and you take a “tender” (smaller boat) into the port. There will be several coming and going from ship to shore all day.

So the couple my parents were traveling with on the Symphony transatlantic had a bit of an issue.  The gentleman left his underwear in a stack at home and forgot to pack it. They checked every venue on the ship and could not locate any boxers or underwear. This guy had to wash them every night of a 12 night voyage! The Symphony has just about everything you can think about EXCEPT underwear. Moral of the story is check and double check your bag before leaving the country on a 12 night cruise.

Not sure about where the port is but I have stayed at a great hotel in heart of Vancouver. Good price for the area, close to great restaurants and sightseeing. The bus to go to the suspension bridges was right at the hotel. It is called blue horizon hotel.

I can tell you one we loved and stayed a week - the Landis Hotel and Suites (request one renovated and high... what a view!).  We wanted a 2 bedroom and 2 bath - it had a kitchen...huge, amazing price and the nicest manager form Egypt. Lovely man (ok, and seriously handsome). Centrally located too, we got a taxi only once (and of course a ferry to Bowen Island). If you are staying only 1 night, you may want something smaller and even closer. But if you decide to stay and see it, do consider this!
The Fairmont Waterfront Hotel was nice years ago when we visited and is still very highly rated. Right now it’s about $200 a night, but that will be higher in summer of course (I didn’t see a date in your posting).  The Hyatt Regency is now about $150 and the Blue Horizon (more boutiquish) runs about $120. Nothing very cheap in town, but get closer to the airport and you can find two good Holiday Inn’s with a free breakfast (but no sightseeing). Enjoy!
