There is no difference between when you pay or have the UDP. The only difference is when the dinners/lunches can be booked. To get the discounted rate you trade the ability to book beforehand. So, keep in mind that it is one dinner, and lunch on all days. All restaurants are open on seas days but places like JR, portside BBQ and Playmakers are often open on port days as well. You don't need a reservation for those places, and they are included in the UDP.

Nothing.  Unlimited Dining Package is a misnomer.  They should rename it to Ultimate Dining Package.  There are plenty of limits.  In practice, the limitations won't impact most people being able to eat essentially all they want, but there are all kinds of limits.

@Traveling Mike Yes they have changed it a bit. Since JR is an a la carte, you get the credit but can only visit it once a day. On my last sailing they had a clipboard that kept track of the rooms/guest with UDP and would cross you off for that day. But if you can get a reservation, you can still visit multiple places, but most people won't be able to get much but one lunch and one dinner.
