kpersons09
I love the spinach dip in the main dining room but on our last weekend sailing on the mariner we weren't lucky enough to have it pop up on the menu. Now I'm having withdrawals and want to try to make it for the holiday. Has anyone ever worked out the recipe? Is it in one of the Royal Caribbean cookbooks? I just don't think I can wait till January to eat it and if I do I'll have to bribe my waiter for the recipe!!
WAAAYTOOO
The waiters may or may not know about the recipe. I have had less than positive results asking waiters for recipes. I don’t know if they truly don’t know or if they are just too busy to bother with it. Either one is legitimate.
melmar02
I found this on another website with the same topic. I haven't tried this one, but it looks good. Hot Spinach Cheese Dip 1 can 13.75 oz. quartered artichokes hearts, rinsed and drained 2 green onions, chopped 1 garlic clove, minced 1 T. butter or vegetable oil 1 bunch fresh spinach, rinsed, trimmed, drained and chopped. 1 1/2 T. flour 3/4 C. whipping cream 1 1/2 C. shredded Monterey Jack cheese 1/4 C. grated Parmesan Cheese 1 T. pine nuts (optional) Salt and pepper to taste Tortilla chips In a large skillet, saute artichoke hearts, green onions, and garlic in melted butter, stirring often, 2 to 3 minutes, until onions are limp. Add spinach and continue cooking 1 minute, until cooked down. Stir in flour and cook, stirring 1 to 2 minutes. Gradually stir in cream and heat until mixture boils and is slightly thickened. Stir in Jack cheese, Parmesan cheese and pine nuts. Heat just until cheese is melted. Do not boil. Season to taste with salt and pepper. Spoon into a heat-proof serving dish and serve with tortilla chips. Make 4 to 5 servings. Neesa, FireFishII and Baked Alaska 1
Baked Alaska
@melmar02 WOW! Welcome to the Boards and a big Thank you for sharing. Don't know how it compares to the RCCL MDR, but this looks killer. Going to make for Christmas get togethers. I like that this has FRESH spinach, which I always have. I never have frozen on hand. melmar02
