They didn't have to go with the best type of brandy (cognac) given that some of the flavor will be lost to the other ingredients.

Maybe they just did it to "elevate" the drinks in this pricey experience.  When I made this I was out of VS so I had to use VSOP.

SARSAPARILLA OLD FASHIONED

The sarsaparilla syrup they use for this cocktail can only be ordered in commercial quantities so I used the root beer syrup from SodaStream as a substitute.  You can adjust the measurements if you like.

No need to start a debate on sarsaparilla vs root beer.  I did what I had to do. lol

Ready to use Sweet Vanilla Foam is available in stores.

This cocktail uses another bitters from Bittercube – Jamaican No.2 Bitters.

I have to wait about 9 months but looking forward to sampling a large portion of that drink menu!

I-LAND NEGRONI

NOTE:
I had no way of getting the Heirloom Pineapple Amaro Liqueur in my area so I just used Pineapple Liqueur.  I’ve done my best to avoid substitutions in this recipe project.

Running Joke:  I have to eat at a Thai place whenever I need an orchid for garnish.

I bet it’s the strawberry purée that makes this bird from the jungle pretty... wink wink

NOTE:
If you want the Pineapple Tiki Glass, don’t get the knock off, get the one from Libbey (Amazon).

QUEEN’S PARK SWIZZLE
Pesky Parrot
Utopia of the Seas

04QueensParkSwizzle.thumb.jpeg.f3aa8f636f0fb15214c449b72062f81f.jpeg

Royal kept the name of this classic cocktail that was created in the 1920s at Queen’s Park Hotel in Port of Spain, Trinidad. This version uses agave in place of the demerara or the simple syrup.

I didn’t have a swizzle stick so I just tried my best to do with a bar spoon what a swizzle stick does.

MONKEY BUSINESS

I can’t quite figure out whether this cocktail was based on a “Dirty Monkey” or a “Dirty Banana.”  There is also an actual "Monkey Business" drink that bears very little similarity to it.

This is one I'm looking forward to my wife (who barely drinks) trying. She'll ditch the coffee though and, knowing her, ask for some chocolate syrup to be added.

One of her only complaints is that she can't get a banana daiquiri. She sometimes asks a Solarium bartender to add a banana from the WJ to a strawberry daiquiri for her, which they usually do even though they're not technically supposed to.

I'm actually looking forward to it myself as well (as designed).

I don't get why they wouldn't use a fresh banana for the cocktails.  On Grandeur I brought a banana to one of the pool deck bars for a BBC.  The bartender said could not use it because there were "inspectors" around on that sailing. I assumed there was some kind of "compliance audit" going on. He put banana liqueur instead.

As I read through the ingredients, my mind definitely went to "an upgraded Dirty Monkey."

IMO, it's more a Dirty Banana due to the absence of the pineapple juice.  But I guess "Banana Business" isn't very catchy.  Maybe they should have gone with "Goin' Bananas."  ha ha

The explanation given to me by a bartender who “bent the rules” for me on Wonder last month was that if any food gets into a blender pitcher it is considered contaminated & has to be sent away for cleaning.

That was actually the first time any bartender even hesitated or said anything. My wife has used that hack for a while. Maybe they’re cracking down or it’s a new protocol. 🤷‍♂️

They must be strict about this.  I too sensed the "fear of being caught" with the bartender I spoke with.

MAI TIME OF MY LIFE

As a Floridian, I was so excited to see a Florida liqueur listed as an ingredient in a Royal Caribbean cocktail.  I first saw it in the “Bae at the Beach” on Icon.  Well, one thing led to another and I somehow got connected with the owners of Munyon’s Paw Paw.  They sent me a shirt and a hat!

Welcome to Pesky PeeGee!

My very own Pesky Parrot at home. The timing was perfect for me. As I was doing research on the frozen drinks at Utopia's Pesky Parrot, Ninja came out with the SLUSHi. It was so hard to get because it was sold out within 24 hours of being launched. I managed to get one just in time for publishing my recipe cards for the frozen drinks. (Okay, I may have changed the schedule a bit lol)

WING ZINGER

I was excited to make this in the Ninja SLUSHi because it was hard to make it in a blender.  I had to pre-freeze all the non-alcoholic ingredients to make it work. I made the Red Bull into ice cubes.  In the slushy machine, it worked perfectly.

BAE AT THE BEACH
Swim & Tonic
Icon of the Seas

I saw a lot of people ordering this drink from Swim & Tonic and the Hideaway Bar on Icon of the Seas.

As a Floridian, I was so excited to see a Florida liqueur listed as an ingredient in a Royal Caribbean cocktail. I think it was used for the first time on Icon. Now it's also in the "Mai Time of My Life" from Pesky Parrot on Utopia. Well, one thing led to another and I somehow got connected with the owners of Munyon’s Paw Paw. They sent me a shirt and a hat!

Now that's a drink I can get behind! Grapefruit, grapefruit, grapefruit!

Still not an incentive to get on the megaships, but a recipe for which I may have to go buy the ingredients.
