PG Cruiser
Hi all! I've been making “copycat” recipes from Royal Caribbean's drink menus and I wanted to share them here. As much as I would love to have the actual recipes Royal bartenders use for these cocktails, I don’t have them at the moment. So I’ve tried deconstructing and recreating the drinks from several sources - menu information, bar crawl videos, mixology websites and channels, common ingredient ratios, similar cocktail recipes among others - all made possible through Google, YouTube and cruising pages. I do have many actual Royal recipes which you can find here: https://www.royalcaribbeanblog.com/boards/index.php?/topic/42039-cocktail-recipes-on-royal-caribbean-ships/ Please note that I am not a mixologist or bartender by any stretch of the imagination, just a copycat who enjoys recreating the Royal Caribbean experience at home. My presentation style is like jotting down the recipe on the menus themselves. Let's all have fun making (and drinking) these cocktails. PG Cruiser
OVERLOOK SPRITZ The Overlook Icon of the Seas NOTE: This is the signature cocktail at The Overlook found only on Icon of the Seas. They use the standard menu for the other drinks. A guest on Icon got me this recipe but we were not sure about some of the measurements, so I “guess-timated” some of them based on other spritz recipes. When I first saw this drink, I thought it had Blue Curaçao. It did not. Instead it had Lagoon Bay liqueur, an aperitif from Iceland. https://www.drinklagoonbay.com/
PG Cruiser
SNAP, CRACKLE, POP! Dueling Pianos Icon of the Seas NOTE: This is the signature cocktail at Dueling Pianos found only on Icon of the Seas. To make a copycat version of this drink, I took inspiration from the Azalea Cocktail, the traditional drink of the Masters. It takes its name from the beautiful azalea bushes that are all over the golf course in Augusta, Georgia and are in full bloom just in time for this tournament. Recipes I’ve found say gin can be used instead of vodka, lime juice instead of lemon juice, and from 1/2 to 1 oz of simple syrup can be added. PG Cruiser
LAVENDER HAZE Spotlight Karaoke Icon of the Seas NOTE: This is the signature cocktail at Spotlight Karaoke on Icon of the Seas. I am not sure if the Spotlight Karaoke on other ships serves this drink. The inspiration for this recipe comes from Hipstirs, a company that makes craft cocktail syrups. Their recipe for “Bees Knees” matches the ingredients for this cocktail. The lavender syrup they sell is even named “Lavender Haze.” https://hipstirs.com/lavender-haze-recipes/ Baked Alaska
PG Cruiser
GARDEN BREEZE Bubbles Icon of the Seas NOTE: I don’t know how this recipe got in my notes for Icon. I can’t remember if I read about it, watched it in a video or someone shared it with me.
PG Cruiser
SWEET HOME ALABAMA Music Hall Icon of the Seas NOTE: On Icon of the Seas, this is the signature cocktail at Music Hall. Googling the ingredients for this drink yielded Georgia Peach Tea. https://www.timesfreepress.com/news/2017/aug/01/lifes-peach/ Renaming it with name of another state was a clue. PG Cruiser
FUEGO FIESTA Cantina Fresca Icon of the Seas NOTE: This is the signature cocktail at Cantina Fresca on Icon of the Seas. It is basically a Spicy Guava Strawberry Margarita. I started with a recipe on a TikTok video for a guava margarita and I added strawberry purée. PG Cruiser
SWAN SONG Lou’s Jazz N’ Blues Icon of the Seas NOTE: I took inspiration for this recipe from the Guava Aperol Margarita. I simply replaced the tequila with vodka. https://theboozyginger.com/guava-aperol-margarita/
PG Cruiser
B-FLAT NEGRONI Lou’s Jazz N’ Blues Icon of the Seas NOTE: I could almost call this an official Royal recipe because I saw a reel (video) of a bartender making it at Lou's. But I’ll keep it as a copycat because I only eyeballed the amounts he put in it. https://www.facebook.com/reel/793062399280448 This is called a “White Negroni” but the Suze makes it quite yellow. I make mine with Cocchi Americano.
PG Cruiser
JAZZY SAZ Lou’s Jazz N’ Blues Icon of the Seas NOTE: This cocktail is a Bourbon Sazerac. The “Saz” in the name was a giveaway. The only tweak I made with the recipe I found online was to replace 1 oz of the bourbon with 1 oz of VSOP cognac. I may not be an expert mixologist but I am a very good Googler. https://www.cakenknife.com/bourbon-sazerac/
PG Cruiser
SOM’S SOLO SOUR Lou’s Jazz N’ Blues Icon of the Seas NOTE: Royal’s version of the New York Sour. Instead of egg white for the foam, they used aquafaba (aka chick pea water), which seems to be a favorite ingredient of the Icon mixologists. https://www.cocktailexplorer.co/.../new.../anders-erickson/
PG Cruiser
HURRICANE Lou’s Jazz N’ Blues Icon of the Seas NOTE: Royal has had Hurricane on their menus for a long time, but for the Icon version at Lou’s, they’ve added passion fruit syrup. PG Cruiser
COUNT BASEY CLOVER CLUB Lou’s Jazz N’ Blues Icon of the Seas NOTE: This is basically a Clover Club cocktail. Most recipes use dry vermouth but Royal’s uses sweet vermouth. I’m guessing they added “Count Basey” to the name for Lou’s jazz theme. Count Basey (or is that Basie?) was a famous jazz piano player. https://www.moodymixologist.com/blog/clover-club
