Right now I'm having to watch my next Liberty sailing in February, as its getting a Sabor and Giovanni's during the January Drydock and those have not been posted yet. Right now only Chops is available online. My experience too (2 months ahead, then 6 months ahead... no apparent rhyme or reason)! Unfortunately, you have to just keep signing in and checking...
