Call the number on the certificate. I believe it has to be a new cruise and the list of cruises is on the back of the certificate.

Yes the concierge in the diamond lounge can help you. Hours are usually 8am-10am and 4:30-8pm. Just stop by the diamond lounge when you board and the hours should be posted on there desk.
