You can purchase this in the cruise planner under dining. When you make the purchase it offers days/times for you to select.

 You could wait until you are onboard to book-typically it’s more expensive to book onboard

We walked in for dinner on a couple different nights with no issues. To this day, it’s as if nobody is aware of this places existence. The food is good (better than the MDR which I despise).
