On Harmony, our dining took about an hour to an hour fifteen although the first night was longer (seems everything takes longer that first night). I would just tell your wait staff when you are seated that you would like to be done by 7:15. That way its fair to them and sets the expectation up front. They can hurry up the kitchen if necessary.
