I'm looking forward to seeing it. I do have one issue with the ice shows, they all follow the same theme: jump around time for no apparent reason other than to change sets and costumes. But they're enjoyable.

St. Maarten, as always I recommend, as always, Bernard's Tours. http://www.bernardstours.com/ I like Tour II better.
Another option is, go to Orient Beach by cab and get a chair, umbrella and drink for around $20pp. One of the top beaches in the world. (A visit here is included in the tour above.)

For St. Kitts, do not do an excursion that involves going to the fort. A lot of walking up steep hills. I recommend it, but not for the multi-generational set.

You might want to ask your TA (you have one, right?) to arrange a transfer for you to/from the airport and pier. That way you know you have something pre-arranged and don't have to scramble if those services are spotty for your cruise.

I also think that North Star and iFly were open for booking much more than 90 days before for my Anthem sailing.

My parents are doing a repo cruise from Bayonne to San Juan. They had planned to stay over, but instead are immediately flying out the same day. They're not happy about the change, but completely understand.

Also, going winter to early spring is peak season. Everything is more expensive. Consider the fall and you can do better.

Honestly, it's mostly about spending more money. Not doing so doesn't make you cheap. There are good deals every now and then, but you have to be prepared to AT MINIMUM blow your budget on the cabin alone. These high end cabins are generally close to your budget PER PERSON. However, every now and then can be much cheaper than that, but still likely over your budget for two people.
If you REALLY want to do it, then you can cancel one trip and make the next one a HUGE blow out trip. But I don't recommend you do that. I recommend you keep doing what you're doing. One day you may realize you have extra disposable income and slowly step it all up.
But one thing about flights. I think you CAN do better than that. I can generally fly to Florida for less than $200 per flight, or less than $800 total for two. I'm out of Newark and, while Boston may be more expensive, I don't think it's so much more expensive.
Are you working with a TA? They can probably help you get more economical options.

You won't be able to get into your cabin until around 1:30 and you might get on the ship 11:30 or earlier. You can explore and have lunch before you get into your cabin.
I carry a shoulder bag, I have no issue with it. Others have small wheelies to crazy sized ones. Smaller the better, is my advice.
You actually need a carry on if you plan to bring wine on with you.
