I want to be careful with terminology because the concept of a Captain's Dinner on Royal may be different than other cruise lines.

On Royal Caribbean a Captain's Dinner is an invitation only dinner to sit at a table with the Captain.  There are typically around 12 seats at this table.  Not all ships do these in modern times.

Royal Caribbean has Formal Nights in the MDR and on a 7 night cruise there would be typically be two.  Some other cruise lines, or some guests call these formal nights "Captain's Night" but that isn't what Royal Caribbean calls them.
