Different bartenders will have different faves, so just ask them. But there's no literal hidden menu in the way Starbucks or McDonalds has. 

I tried Mango Lava Flow for the first time last cruise and loved it, will definitely be ordering a few more on Oasis.

My personal favourite is the BBC - Bailey's Banana Colada - though definetly not a secret item. If I remember correctly Royal also serves a Chocolate BBC - must try that one next time.

Try the R Bar as they seem to be more creative there.
One that's not advertised unless you're on Labadee is the a Labadoozie. Another popular drink is the Lava Flow. A Mango Tango is also pretty good (pina colada and mango). 

Generally if you ask they will make .. they keep going through phases of hiding the menus so that they don't have to put prices on, etc. but all the bartenders we have asked will make anything they have the ingredients for :)
