Onboard they will offer it for purchase on the first 2 days. If you choose not to purchase on the first day and purchase on day 2, you will pay for one less day but then you're buying all your first day drinks ala carte. The onboard price per day is usually higher or equivalent to the prices you can get on the Cruise Planner. There is no option to purchase for just a day.
