Swap out the Bailey's for rum and you pretty much have a banana daiquiri. I would prefer a real banana in place of the banana liquor but I would take it in place of nothing. And spicy. :) I liked the Texas Collins (sp?) from the R Bar on Freedom. The grapefruit habanero daiquiri sounds like a nice step up!
