If my wife and I both have the same offers are we able to book one cabin for us and another cabin for another couple travelling with us? Or would we be required to split and myself and one from the other couple in one cabin and my wife and the other in another cabin? I realize we could just switch room physically ourselves but wondering if anyone knows if RCL will allow to book it so that my wife and I are in the same cabin and the other couple is in another cabin?

The certificate holder must be in the room.  I ran into that same problem when I wanted to bring my daughter and her husband on our trip in January.  I would do as you suggest and book you and your wife in separate rooms, each with a "friend", and then switch rooms once on board.  They don't have bed police checking to make sure you are sleeping in the right cabin.

Another option, which is what we did for our January trip, is for you and your wife to combine your certificates and then upgrade to a 2 bedroom suite.  We both had Balcony certificates, which would have gotten us to a Jr. Suite combined, and then I paid the difference for an upgrade to the 2 bedroom grand suite and added my daughter and son-in-law.  The upgrade and adding the other two was at my casino rate, so not too much to be honest.

Thanks for the quick response and the added tip! We knew we could double offers up to upgrade but never thought about the two bedroom suite idea, we'll definitely consider that in the future.

How big is the casino on Grandeur of the Seas?

It is very small, possibly the smallest of the fleet and if you care about a non-smoking section, it's basically nonexistent. The machines are also very dated.
