Yes, shrimp and octopus are cooked, but do the flash fried rolls still contain raw fish? Also, what's with all the rolls with asparagus? I haven't had sushi in a while, but I don't remember asparagus being used so much. Supplying a cruise ship is complex, so limiting the variety of ingredients makes it easier for them to consistently source for their menus. The sample menu is what I've experienced recently at Izumi.
