If we plan on eating mainly at the buffets which dining plan would we pick

There isn't a "dining plan"...you just go to where you want to eat.  Specialty dining,  which has an upcharge, do not offer buffets, so you are set to go!  The Windjammer is open for breakfast, lunch and dinner.  They close about 10 PM but free room service is available until midnight.   After midnight, there is a room service charge to place an order.

I would say if you had a choice, pick My Time Dining.  That way, you aren't assigned a specific table in the traditional dining times and can enjoy the buffet at your leisure.  

 

Truth be told, there is no compelling difference given your situation. If you plan to dine at the Windjammer buffet each evening, there is nothing special or different you have to do.
