I think the rest of your advice about saving money is good, but I'm not so sure about the BBQ-we take it pretty seriously 'round here, with smokers in parking lots and meat on them for days. Chops isn't the best steak dinner ever and Giovanni's isn't the best Italian ever. Having eaten at Portside BBQ with more than one Texan and folks from Tennessee they were pleased on the basis it was on a cruise ship. No one should expect it to be better than what they can do at home if they know how to do BBQ. In fairness not every BBQ place I've tried in Texas has been "the best ever" either.
