I can give hugh thumbs up on these two private excursions, booked independently from RCCL:

Wild on Wildlife in Roatan

Deep Sea Fishing and Snorkeling in Costa Maya

After our fishing trip was done, we continued to hang out at the beach resort in Mahaual we sailed away from (40 Canones Resort) so it added unexpected beach time before we headed back to the ship.  They had shaded lounge chairs available and it wasn't an all-inclusive resort (we paid for our own food), so we figured we'd stay until someone kicked us out, which they never did.  I even got a massage on the beach for only $20 which was amazing.

In Cozumel, we went to Playa Mia and bought a Beach Day Pass + Buffet. We traveled with young children and they had a really cool aqua park for kids. For the Beach pass it included chairs, use of the beach, pools, aqua park, lazy river, jacuzzi, kayaks, paddle boats, and food.  It was a short taxi ride to the beach.

Cozumel: Playamia

Costa Maya: YaYa Beach (3rd party excursion, less crowded)

Roatan: Tabyana Beach (great snorkeling and the staff keep the vendors away)

Yes there is a theme, beach, beach, beach. Have been on the tours with the kids and now the wife and I like to sit, relax and enjoy the sun.

I liked Nachi Cocum in Cozumel. Very quiet, very few kids - my girls were disappointed about that.

Trying out Paradise Beach (probably) on my Indy cruise. If I go, I'll report back.

Costa Maya, we took a taxi to Tropicante bar/restaurant on the main beach strip. Zero complaints about the service. Owner Steve is from Arizona and seems like a nice guy. Water was a pleasant temperature, but seaweed was everywhere. They try to minimize the amount around but it's a bit of a losing battle. I feel bad for the owners along the strip - the stuff is coming from somewhere else and they do what they can.

Roatan is beautiful. We did one of Royal's sightseeing tours which did not result in as much sights as I wanted, but we got some great views on the hilltops and in the West End.
