On one of our previous cruises we were able to email the Dining ‘concierge’ (for lack of a better title) and they responded directly with me and made the requested changes.

As far as question #1, I contacted the Travel Agent we purchased our cruise thru. They are able to access your account and make changes for you. I’m sure they can answer question #2 as well.
