I agree— we did Wonderland our last night on Symphony and the food was meh! Nothing was hot. It was very weird. And I like molecular gastronomy and am open-minded. But they are missing the mark here.

I prefer 150 Central Park over both Chops and Wonderland.  When we were on Allure they brought us anything we showed the slightest interest in, lol.

That was out backup plan too for this 12/31 cruise on Symphony. Had the car rental reserved. After some research… Here is where I would have stayed-  https://www.parrotkeyhotel.com

Actually, you can go to guest services, hopefully prior to the last evening when the lines get long, and fill out a form that allows them to provide an extra tip to anyone you wish to name.  They will then charge that to your sea pass card and ultimately to the credit card you have on file to pay for expenses. 
You either have a credit card on file or you need cash to pay your bill before you leave the ship.  ( I have heard that for those that have neither, they have very high interest rate financing document you have to sign to get off - no you can't stay another week,  and wash dishes.)
Although I do agree with those that say the best thing to do is bring cash and either hand it out as you go or put it into one of the WOW envelopes at the end, last night putting the persons name on it and then hand that to them or drop off a guest services.
 

It has been pretty great! We are getting 1 day fare OBC for the STT stop cancellation. The crew service is amazing. Food is awesome. We really loved 150 Park Central. Otherwise, Coastal Kitchen has been the best!   The shows are pared down- no Aqua, or Broadway productions. 

Got the shows for 12/31 Symphony and looks pretty pared down…?

Yes, totally doing that. Agree. Yet the likelihood of Star Class at my $5k total cap is not so likely. I don’t even need Star.  So I’m bidding for the. GS1,  OS, GS2, AQS1.  

So, finally got our WS GTY assignment... a JS on Deck 6.  Meh.  The balcony is as big as they come for JS so that's a plus.  I've done the max bids on the GS1 and GS2, and a strong bid on OS and AQS1 so we'll see.... There's definitely inventory there for GS1 and OS.  I will report back... Wish me luck!!!

I like to deduct the savings of not being home (power, food, etc) This can lower the perceived cost of cruising by 25-30%.
