Worst - Adventure: Dining Room at 8:00 PM Service for a party of 11. We had new server trainee (1st cruise). Has to wait too long for drinks, food was cold and therefore we were always in the dining room much later than other tables.

I would just speak with the excursion people once you get on board and find out how structured they are on those times.
Pinging @tonyfsu21 about what to do in FLL, you can go to the airport and check your luggage in and get your boarding pass and then leave for a short while.

The only reason to stay on board in Labadee is if you are not a beach person.  
Yes there will be spa deals in port just as there are in most ports.  Lines in places like the Windjammer will be shorter in port.  
If you desire front row chairs get off early.  No different than the pool deck.  Getting up at 10am on a sea day and expecting front row pool chairs is going to lead to disappointment.  Getting off at Labadee late will yield similar results but plenty of seats further from the front line of the beach will be available. 
Cabanas and less expensive alternatives are popular so they sell out quickly.  On a smaller ship that is less of any issue but still occurs.  Book them early, months before sailing if it's important to you.  
Consider exploring Labadee beyond the beach.  The nature trails, some excursions by boat that take you down the coast to see more of Haiti for example.  
I love Labadee.  I'll be there soon, for nearly the 10th time.  Still one of my favorite stops.

I was quoted $265 plus 12% gratuity for the vow renewal. which I thought was very reasonable.
 

I think claiming bait and switch is a little extreme.  It was probably popular, nearly or did sell out so they added another time slot.  
If you go to order history at the top of the page in the cruise planner and find it in there what does it indicate?
If it’s wrong in order history call tnem.  If you don’t like the answer you first get call back.  I wouldn’t wait until you are on board.  If 11:30 sells out they can’t switch it on board.  
When you call be polite, explain you tried to change it online etc.  
 

@kim W - How's the wedding planning coming along? I'm also helping my daughter plan her Royal Wedding as soon as the Phase II Itineraries get released. We actually called and spoke to a really nice "experienced" wedding planner and asked a lot of questions prior. So please tell me everything is running smoothly.... :)
